Weekend Fun

When the grandkids come for a sleepover we always have fun.  Cooking together has become one of our favorite pastimes.  The weekends are when I normally restock the basics like vegetable broth, almond and coconut milk, so they jump right in to help.  They love to help me chop the carrots and celery and fill the slow cooker.  They love the smells, colors and textures.  They want to do the chopping and stirring. They make my routine fun and exciting. 

This weekend we made sweet potato toast.  What a simple and fun way to play.  We peeled and sliced our potatoes and put them to roast in the oven.  While they were baking we went on a treasure hunt for toppings.  We found nut butters, avocadoes, fresh strawberries and apples. We had honey from our bees and lemons from our tree, which they love to pick – not the honey of course! We mixed, matched and decorated – each one was a masterpiece of flavors and colors!  We felt like artists and they helped me to enjoy the process, because they have such open inquisitiveness and a natural excitement for what we are creating.

This is one gem of a recipe.  Thank you Sahara Rose for recipe.  It answered an age old problem for not only breakfast, but to take to work and have on hand when lunchtime hits and we haven’t brought something in.  At the office I have a toaster and I always have nut butters or avocadoes, so rather than eating something that is not nourishing just to get me by, I have this wonderful treasures in a bag in the refrigerator and any of us can quickly make a nourishing healthy lunch on the fly. Life is sweet!
